Mystery Director's Reserve 2020 Cabernet Sauvignon

Mystery Director's Reserve 2020 Cabernet Sauvignon

About this wine:
For those who love a full-bodied Cabernet Sauvignon from one of the best growing regions in Australia, we have an exciting discovery for you. Hailing from the phenomenal Coonawarra Limestone Coast region, this Cabernet Sauvignon stands out. As the region has a moderate climate with a long growing season, the wine has a deep purple color and concentrated flavors.

Special parcels of fruit from our Coonawarra vineyard were selectively harvested, crushed and destemmed. The fruit was cold soaked for three days before being inoculated. The ferment was cool and controlled over a period of 7 days. The wine was transferred to a combination of new and old French Oak barrels, with the new barrels making up approximately 30%. The wine went through a secondary malolactic fermentation in barrel before ageing in barrel for a further 12 months. The wine was then stabilised, fined, and blended prior to bottling.

Tasting Notes:
Colour: Deep Purple
Nose: Mint, Violet and Dark Plum
Palate: Dark Chocolate, blackcurrant and a subtle mint character line the palate whilst the firm tannin structure creates and soft and elegant finish.
