Emidio Pepe artisanal pasta was created with the aim of nourishing us and the people around us with non-genetically modified and unrefined flour products.
Artisanal pasta comes from the processing of ancient durum wheat "Senatore Cappelli" whose semolina has extraordinary organoleptic and nutritional qualities. This variety of durum wheat with its original structure is stronger and more resistant to pathogens and does not require chemical treatments such as pesticides, herbicides and various fertilizers.
Cappelli wheat is sown and raised near the Emidio Pepe vineyards. The milling preserves the bran and preserves the properties of the grain intact.
